1 1/2#'s round steak
2 T. flour
1/4 t. salt
1/4 c. vegetable oil
2 T. flour
1 (16 oz.) can tomatoes, chopped, undrained or tomato juice
1/2 c. celery, chopped
1/2 c. carrots, chopped
1/2 c. onions, chopped
1/2 t. soy sauce
potatoes, if desired

Combine 2 T. flour and salt. Pound steak to 1/4" thickness. Cut into serving size pieces. Dredge steak in flour mixture. (Betty used tenderizer on the meat.) Brown in skillet in hot oil. Place in a baking dish and set aside.

Add flour to pan drippings. Cook over medium heat for one minute stirring constantly. Add vegetables and soy sauce. Cook until thickened.

Pour over steak. Cover and bake 1 hour, 15 minutes or until tender.
