3 T. butter
3 c. leeks, white part only
2 qt. chicken stock (canned broth)
1 c. whipping cream
4 c. potatoes, peeled
3 T. flour
Salt & Pepper to taste

Directions:
Directions:
Melt butter, add leeks, cover pan and cook slowly for 5 minutes without browning. Blend in the flour, and stir over moderate heat for 2 minutes. Remove from heat. Let cool a moment and gradually beat in the stock. Add the potatoes. Bring to a boil, and simmer partially covered for about 40 minutes, until vegetables are tender. Let soup cool to room temperature, add cream, heat and serve. Be careful as it will curdle.
