Ingredients: 2 1 lb packages of lean ground turkey (99% lean) 16 oz can of refried beans with green chilis 2 cups of Chi-Chi's medium salsa 2 cups of fat free, plain greek yogurt 1 cup of finely shredded sharp cheddar cheese 1 cup of shredded pepper jack cheese 12 oven ready lasagna noodles Oregano to taste 1 tsp cumin Garlic Powder to taste Salt to taste Pepper to taste Any extra desired seasonings

Directions:1. Preheat the oven to 350º. 2. In a skillet on medium heat, brown the lean ground turkey and drain. 3. Add the refried beans, yogurt and seasonings to the ground turkey until cooked through and mix well. 4. Spray a 9x13 inch baking dish with a non-stick cooking spray. 5. Spread out just enough salsa in the baking dish to cover the bottom of the dish. 6. Place 4 lasagna noodles in the bottom of the baking dish. Next, place half of the meat mixture on top of the lasagna noodles. 7. Place another 4 lasagna noodles on top of the meat mixture and place the remaining half of the meat mixture on top of the lasagna noodles. 8. Next, layer 4 more lasagna noodles on top of the meat mixture. Then, spread out the remaining salsa on top of the lasagna noodles evenly. 9. Top the lasagna with the sharp cheddar cheese and the pepper jack cheese. 10. Cover with foil and bake for 60-70 minutes or until the cheese is melted and the lasagna is bubbly.
