8 potatoes
2 onions finely chopped
5 stalks celery finely chopped
Chicken stock (likely need 1½ 32 oz boxes) *use stock not broth. Pacific brand is best.
½ tsp parsley
1 tbs chives
1 tbs salt
1 tbs pepper
2 sticks of butter
10 oz sour cream
1 pint heavy whipping cream
1 can creamed corn
bacon
cheddar

Directions:

1. Chop potatoes into large (equal) parts and place in large pot.
2. Almost cover the potatoes with chicken stock
3. Add parsley, chives, and salt & pepper
4. Boil for 15 minutes
5. Use a hand masher to mash the mixture leaving some small chunks
6. Add butter, sour cream, and whipped cream. Mix well.
7. Add corn

The soup should be thick, but not so thick that it's like mashed potatoes. Add more cream or a bit of milk to desired consistency. Add more S&P to taste. Top with bacon crumbles and cheese to taste.

*This is an estimation. When asked for specific amounts for ingredients, Mom says things like "oh, just add enough so that it looks right".
