1 lb dried red beans
8 cups of water
1 ham bone
2 lbs smoked sausage cut into 1 in pieces
3 cloves garlic (pressed)
1 ½ cups chopped yellow onion
¾ cup chopped green onions
1 ½ cups chopped celery
⅔ cup chopped bell pepper
1 bay leaf
1 teaspoon Worcestershire
¼ teaspoon Tabasco
1 tbs minced fresh parsley
1 ½ tsp salt
3 cups of steamed rice

Directions:
Directions:
Combine beans, water, and hame bone in a large saucepan. Bring to a boil. Reduce heat and simmer for 40 minutes. Add sausage and cover. Cook 60 minutes, stirring occasionally. Add garlic and next 5 ingredients. Cover and cook for an hour and a half or until beans are soft. Add Worcestershire and next 3 ingredients. Simmer 5 minutes. Remove bay leaf. Serve over rice.

I believe it was the Christmas of 2011 that the Barringers, the Ted McKnights, Bob McKnight, the Browns, the Thedfords, and even Clea decided to "do Christmas" in Austin. The theme was cajun, and wow did the coon-ass come out in everyone! Rhonda & Dorothy cuddling with vodka, dance party in the kitchen, and various other shenanigans. So much fun.
