1 lb. green beans
Oil
1 tsp. mustard seed
2 tsp. garlic
Yellow or orange lentils
1 tsp. turmeric
1 tsp. red chili
1 tsp. salt
1 14.5 oz. can roasted tomatoes, drained
1 onion
Cilantro

Directions:
Directions:
Steam green beans until soft.
In frying pan, heat 1 T. oil. Add green beans, 1 tsp. garlic and mustard seed.
Heat through and set aside.

Fry up onions, set aside.

Soak lentils for 1 hour.
Rinse, then cover with water.
Bring to boil, then reduce heat and simmer.
Add in spices.
Toward end of cooking (when liquid is absorbed into lentils), add green beans, tomatoes or both.
Top with cilantro and fried onion.
