1 3.5 oz package pistachio pudding mix (instant)
1 16 oz can pineapple chunks (Nip used whatever canned fruit she had on hand)
1 8 oz can crushed pineapple
1 cup chopped pecans
1 cup miniature marshmallows
1 12 oz counter CoolWhip

Directions:
Directions:
In medium bowl mix together both cans of pineapple.
Sprinkle pudding mix over pineapple and let sit about 3 minutes.
Add nuts and coconut.
Blend in whip topping and marshmallows, combining well.
Cover and chill at least 2 hours.

This stuff is slightly scary looking, but I begged for it every time I went to my grandparents' house. Listed as a "salad", but straddles the desert line.

It was a Nip speciality along with something she called "chopped suey" that was like no other "Chinese" food I've ever tasted.

I would have returned from those weeks with my grandparents a skinnier kid had it not been for the fact that I could always talk them into buying me copious amounts of the sugary cereal I wasn't allowed at home.
