1 1/2 pds. small new red potatoes
1 T. veg.oil
1 med onion chopped
garlic to taste about 1/2 tsp
1 c. chopped parsley
1 c. chicken broth
1/2 tsp pepper
salt to taste

Directions:
Directions:
Clean and cut potatoes in quarters. Do not peel.
Place potatoes in cold water and set aside.
Heat a large skillet over med heat and add oil.
Sauté onion and garlic for 5 min. til tender.
Add broth 3/4 c. parsley and mix well.Bring to a boil.
Place potatoes in a single layer in skillet Return to a boil.Reduce heat simmer covered for 10 min. or until potatos are tender.
Remove potatoes with slotted spoon to serving bowl. Add pepper stir Pour sauce over potatoes and sprinkle with remaining parsley.
