Fruit Pizza Recipe

1 c. butter
2½ c. sugar, divided
2 eggs
2 tsp. cream of tartar
½ tsp. soda
½ tsp. salt
12 oz. cream cheese
2 T. pineapple juice
Choice of fruits (enough to cover 2 pizzas)

Directions:
Directions:
1. Cream together butter and 1½ cups sugar.
2. Add eggs, one at a time and beat until fluffy.
3. Sift together dry ingredients.
4. Add to butter mixture and combine well.
5. Press into 2 pizza pans.
6. Bake at 375º for 10 minutes.
7. Cool completely.
8. Combine cream cheese, remaining 1 cup of sugar and pineapple juice until smooth.
9. Spread onto crusts.
10. Arrange fruit in a spike or flower like pattern over crusts.

Personal Notes:
I usually use fresh pineapple, strawberries, kiwi, blueberries, raspberries and mandarin oranges (well drained and pat dry). Start with the raspberries in the center then create a circle with oranges, followed by a circle of kiwi, and then one of blueberries. Next place cut strawberries point end out and fill in with pineapple chunks around the outside.
