1 stick (1/2 cup) margarine or butter, softened
1 1/2 cups sugar
1 egg
2 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup lemon juice

Icing
Colored sugar or lemon icing
1 1/4 cups confectioners' sugar
2 T lemon juice
Food coloring if desired

Directions:
Directions:
In large mixing bowl, cream together margarine and sugar, beat in egg. Stir flour, baking powder, baking soda and salt together, add alternately with lemon juice to creamed mixture, blend thoroughly. Dough will be soft. Chill overnight.

Preheat oven to 400º. On well floured surface, roll out 1/3 of the dough in 1/8-inch thickness; chill remaining dough. Cut out cookies with floured cutters, sprinkle with colored sugar. If desired. Place 1-inch apart on greased baking sheets. Bake 6 to 8 minutes or until edges are lightly browned. Cool. Ice and decorate if desired

Frosting:
Mix confectioners' sugar with lemon juice until smooth. Add food coloring, if desired. Spread on baked and cooled cookies to decorate.
