1/2 cup butter
1 cup white sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup confectioners' sugar
12 ounces mint flavored chocolate chips
1 (13 ounce) package of mini peppermint patties​

Preheat oven to 350 degrees. In a microwave oven or the top half of a double boiler, melt 1 cup of the mint chocolate chips, and set aside to cool. In a large bowl, cream butter and sugar; add melted chocolate, eggs and vanilla. Stir in flour, baking powder, and salt. Then stir in the remaining mint chocolate chips. Unwrap and cut the mini peppermint patties into 4 pieces. Wrap about 1 tablespoon of dough around each quarter. Roll balls in confectioners' sugar and place 1 1/2 inches apart on the cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Before the cookies are completely cool, roll in the confectioners' sugar again. Makes 3 dozen.
