1 C quinoa
10 oz mild enchilada sauce
4.5 oz chopped green chilies, drained
½ C frozen corn
½ C black beans, drained and rinsed
½ tsp cumin
½ tsp chili powder
Kosher salt and black pepper, to taste
¾ C shredded cheddar, divided
¾ C mozzarella, divided
1 avocado
1 roma tomato

Directions:

1. Cook quinoa in 2 C water, in a large sauce pan.

2. Preheat oven to 375º. Lightly oil a 8x8" pan.

3. In large bowl, combine first 8 ingredients. Stir in ½ C cheddar and ½ C mozzarella.

4. Spread mixture into baking dish. Top with remaining cheeses. Cook about 15 minutes. Garnish with tomato and avocado
