1/2 pound left over roast pork
2 tbsp. vegetable oil
1/4 cup soy sauce
1 tbsp. sugar
1/2 tbsp. corn starch
sesame oil or hot chili oil (if desired)
2 pkgs. top Ramen
1 can chicken broth
2 hard boiled eggs
thinly sliced green onion, two or three

Directions:
Directions:
Slice left over pork into bit-sized strips. Saute in oil until browned. Mix soy with cornstarch and sugar (and sesame or sesame chile oil). Add to pork and stir, adding chicken broth if sticking to pan. Meanwhile, cook Ramen in broth until tender. Pour into a bowl and top with pork. Garnish with thinly-sliced hard-boiled eggs and green onion.

Papa Ernie fixed this often. He loved Chinese food, but take- out wasn't common in his day so he invented his own satisfying dish to make at home.
