4 large fresh tomatoes
4 large mushrooms, chopped
1 handful fresh spinach
1 small onion
sesame seeds*
paprika
butter flavored cooking spray

Directions:
Directions:
Preheat oven to 400º.

Sauté onion using cooking spray. Scoop middle out of tomatoes, leaving a generous amount around the sides, and cut a thin slice off the bottom.

Spray cookie sheet generously with cooking spray, then place tomatoes on it with hollow side up. Stuff with layers of spinach, mushrooms and onions. Make sure tomatoes are full but not overflowing. Sprinkle sesame seeds and paprika over top of each tomato.

Bake at 400° for 20 minutes or until tomatoes are soft, but not mushy.
