Pecan Pie Recipe

3 eggs
1 c. light corn syrup
½ c. sugar
pinch of salt
⅓ c. (5 1/3 Tbs) melted butter
1 c. pecan pieces
½ tsp. vanilla

Directions:
Directions:
1. Beat eggs and salt until light. Gradually add sugar; fold in butter, syrup and vanilla.
2. Pour mixture into unbaked 9" pastry shell.
3. Cover top with pecans. Cover edge of pie crust with foil to keep it from becoming too dark.

Bake at 450º for 12-15 minutes.
Reduce oven to 275º for 40 minutes longer or until pie is nicely browned.

If knife inserted into the center comes out clean, it is done.
Serve cold or slightly warm with sweetened whipped cream.
