2 large eggplants, peeled
1 cup barbecue sauce (sugar/sweetener free)
chili powder
onion powder
olive oil flavored cooking spray

Directions:
Directions:
Preheat oven to 350º.

Slice eggplant into discs about ¼ inch thick. Prepare a cookie sheet by spraying with non-stick spray. Arrange slices in a single layer on sheet.

Bake eggplant at 350° for 15 minutes. Flip slices and baste with barbecue sauce.

Bake for another 10 minutes or until soft, but not mushy.
