4 pork chops or cutlets
Salt and pepper
1 T fat
3 T chopped onion (I use dried)
3 T diced green pepper (I use sweet pepper flakes if I don't happen to have a green pepper around.)
2/3 cup uncooked rice
1/4 cup tomato juice
2 cups water

Directions:
Directions:
Season chops with salt and pepper. Brown in fat in an oven-proof casserole or skillet. Add onion, diced pepper, uncooked rice, tomato juice and water.

Bake at 350º for 1 hour or until liquids run clear in pork chops
