Ingredients:  
Meat from one whole chicken
2 quarts chicken broth
2 cups corn meal
1 can corn
1 can mushrooms
2 cans medium olives
1/4 cup oil
1 large onion, chopped
2 cloves garlic, minced
1 #2 can whole tomatoes (or diced), not drained
1 tbsp. salt
1 tbsp chili powder
Cheddar cheese and green onion to top with

Directions:
Directions:
Saute the onion and garlic in oil.
In a large mixing bowl, incorporate all but cheese and green onion.
Pour into large buttered casserole or baking pan.
Bake at 350 degrees for 1 1/2 hours. Top with cheese and cook another 15 minutes. Make sure the corn meal has set. Top with green onions and serve with sour cream and salsa.
