8 oz. store bought ravioli (cheese or pesto)
2 T. olive oil
¼ c. sun-dried tomatoes
1 c. Aartichoke hearts - chopped
3 T. capers- drained
½ tsp. Italian seasoning
2 c. spinach - fresh
1 T. olive oil
¼ c. Parmesan cheese, shredded

1. Cook ravioli until al dente; drain.
2. In a large skillet, heat 2 tablespoons olive oil on medium heat.
3. Add chopped sun-dried tomatoes, chopped artichokes, capers, Italian seasoning, and cook 2 minutes.
4. Add fresh spinach and continue cooking and stirring until the spinach wilts.
5. To the skillet with sautéed vegetables, on medium-low heat, add cooked ravioli, 1 tablespoon olive oil and stir. The dish should be salty enough from the capers but if not, add more salt if needed .
6. When serving, top with shredded Parmesan cheese.

This is one of Pete and my favorite side dishes. I don’t care for artichokes so I leave those out and it’s still a great dish!!
