4 boneless, skinless chicken breasts (about 1¼ lbs.)
Salt and Pepper
2 T. olive oil
¼ c. finely chopped onion
1 tsp. finely chopped garlic
1 tsp. rosemary
½ lb. small mushrooms (large cut in quarters)
2 T. red wine vinegar
4 T. drained capers
½ c. chicken broth
1 T. tomato paste
4 T. chopped parsley

Directions:
Directions:
Salt and pepper chicken breasts and sauté over medium-high heat in olive oil until lightly browned, turning often - 5 minutes. Add onion, garlic, rosemary and mushrooms. stirring - 5 minutes, pour off fat. Add vinegar and while stirring, add capers, broth and tomato paste, blend well. Bring to a boil, cover and simmer 5 minutes. Add parsley and stir to coat chicken well.
