2 1/4 cups flour, stirred and measured
3/4 cup yellow cornmeal
1/4 C plus 2 T sugar
1 1/2 T baking powder (yes Tablespoon)
3/4 tsp salt
3 eggs
1 1/2 cups milk
1/2 cup melted butter

Honey Butter
Whip 1/2 cup (1 stick) softened butter with 1/4 tsp vanilla and 1 egg yolk; gradually add 1/2 cup honey, beating constantly. Makes 1 cup

Sift together dry ingredients into large mixing bowl. In separate bowl beat eggs lightly, then blend with milk and melted butter. Make well in dry ingredients and add liquid ingredients. Stir just to moisten.Batter will be lumpy and floury. Pour into well greased 9-inch square pan.
Bake at 425º for 25 to 30 minutes. Serve with plenty of honey butter.
