3 sweet peppers (mixed colors look nice)
1 celery stalk
1 carrot
1 onion
10 ounces tomatoes (fresh or canned - I prefer Roma tomatoes)
salt and pepper
olive oil flavored cooking spray

Directions:
Directions:
Coarsely chop all the vegetables.

Spray the bottom of a large pan with olive oil spray Add the vegetables, salt and pepper.

Cook uncovered on medium heat for 40 minutes, adding water if needed.
