3 eggs, well beaten
1 cup cooking oil
1 1/2 cups sugar
1 3/4 cups grated unpeeled zucchini (I prefer it peeled)
1 1/4 cups orange juice
2 T freshly grated orange peel or Schillings Orange Bits
1 cup chopped nuts
2 tsp vanilla
3 cups sifted flour
1 tsp salt
1/4 tsp baking powder
1 tsp baking soda

Directions:
Directions:
Blend together eggs, oil and sugar. Add zucchini, orange juice, orange rind or bits, nuts, and vanilla. Sift together dry ingredients and stir into batter. Bake in two large or four small loaf tins that have been greased. Bake at 350º for 45 minutes or until done. Slice warm or cold and serve with a dab of whipped cream for dessert, if desired.
