1 ½ Pounds Chicken, Cut into Medium Sized Pieces
3 Tablespoons Olive Oil
2 Cloves Garlic, Minced
1 Large Onion
1 Large Leek
4 Large Carrots
4 Celery Stalks
4 Medium Potatoes
2 Teaspoons Herbs de Provence
⅓ Cup White Wine
2 Cups Chicken Broth
Salt
Freshly Ground Pepper

1. Preheat oven to 350º F.
2. Cut all vegetables into medium-large pieces. Set aside.
3. Heat olive oil in large dutch oven on stove top.
4. Brown chicken in oil. Add garlic and continue to cook for 1 minute.
5. Add wine, let simmer for 1 minute. Turn chicken to brown on other side.
6. Arrange vegetables around chicken. Sprinkle Herbs de Provence evenly over vegetables.
7. Add chicken stock and salt and pepper to taste.
8. Cover and move to oven. Bake for 50-60 minutes until vegetables are done.
9. Serve with fresh French bread.

You can use boneless, skinless chicken or use chicken thighs with skin on. Cut vegetables into pieces sized that you want to serve.

Be careful! Dutch oven will be very hot for an extended period of time. I managed to drop my Le Creuset dutch oven and it shattered while cleaning up. Very sad day.
