1 T. vegetable oil
4 boneless chicken breast halves
1 can cream of chicken soup (can substitute cream of mushroom)
1 1/2 c. water
1/4 t. each paprika and pepper
1 1/2 c. uncooked instant rice
2 c. fresh or frozen broccoli flowerets
Shredded cheddar cheese, optional

Directions:
Directions:
Heat oil in a skillet. Add chicken and cook until browned. Remove chicken and dice.
Add soup, water, paprika, and pepper. Heat to a boil. Stir in rice and broccoli. Stir in diced chicken. Cover and cook over low heat 5 minutes or until done. Sprinkle with cheese and cover until melted.

For creamier rice, increase water to 1 2/3 cups.
