Chicken Marsala Recipe

½ c flour
½ tsp salt
½ tsp pepper
1 ½ lb boneless, skinless chicken, cut into strips
¼ c olive oil
½ lb fresh mushrooms, sliced
⅔ c chopped green onions
6 medium tomatoes, seeded and chopped
½ tsp salt
½ tsp dried basil
1 ½ c Marsala
Hot cooked angel hair pasta
½ c freshly grated Parmesan cheese
¼ c chopped fresh parsley
garnish: fresh basil sprigs

Directions:

1. Combine first 3 ingredients in large zip-top bag. Add chicken to flour mixture, a few pieces at a time, seal bag, and shake until chicken is well coated.

2. Heat oil in a large skillet over medium heat. Add chicken, cook until lightly brown, turn. Cook until done. Remove chicken, drain on paper towels.

3. Add mushrooms to skillet; cook over medium-high heat, stirring constantly, until tender. Remove mushrooms from skillet, and set aside; reserve pan drippings in skillet.

4. Add green onions to drippings; cook, stirring constantly, until tender. Stir in tomato, salt, and basil; cook 4-5 minutes, or until most of the liquid evaporates. Add Marsala, and simmer, uncovered, 8 minutes or until thickened.

5. Return chicken and mushrooms to skillet, and cook until thoroughly heated. Serve with hot cooked pasta, if desired.
Sprinkle with Parmesan cheese and parsley.
