8 C. zucchini
3 Tbsp. flour
1 tsp. cinnamon
1 Tbsp. lemon juice
1 lg. box yellow cake mix, dry
¾ C. chopped walnuts or pecans
1 C. sugar
1 dash of salt
¾ tsp. cream of tartar
1 20oz. can crushed pineapple
1 C. butter, melted

Peel and cut the zucchini lengthwise, strip out seeds, cut in ½ inch slices, cook in boiling water until tender. Drain and cool in cold water for 5 minutes. Drain, and add sugar, flour, salt, cinnamon, cream of tartar, and lemon juice. Stir well. Add pineapple and juice. Mix well. Do not beat. Pour into a greased baking dish, 13 by 9. Spread dry cake mix over the top. Drizzle melted butter over cake mix. Sprinkle nut on top. Bake at 350º for 60 minutes.

The zucchini tastes like apple cobbler. You'd never guess there was zucchini in this. Easy way to use up summer garden veggies when zucchini is coming out of your ears.
