Italian Style Spinach Recipe

1 10 oz frozen chopped spinach
3 T. olive oil
1 small clove of garlic, minced
2 eggs
¼ tsp salt
⅛ tsp pepper
3 T. grated Parmesan

Directions:
Directions:
1. Cook spinach according to directions. Drain thoroughly, pressing out as much liquid as possible.

2. Heat olive oil and minced garlic in skillet. Cook until garlic is golden. Add the spinach, salt and pepper, and mix well. Spread the spinach mixture over the bottom of the skillet and sprinkle with 1 T. of Parmesan cheese. Cook turning the spinach over until very hot.

3. Break 2 eggs over the spinach mixture, and keep turning until the eggs are cooked. Stir to mix.

4. Drain off any excess oil from skillet. Turn spinach onto a warm platter and sprinkle with 2 T. grated Parmesan cheese.

My first encounter with Italian spinach was at a restaurant in Memphis, called Pete and Sam's. They had the best spinach. I got this recipe from mom many years ago. I don't know if it's the same, but it's good.
