3 c. apples (McIntosh or other apples, peeled, cored and diced) 4 medium apples
3 c. flour
1 tsp. baking soda
½ tsp. salt
2 c. sugar
1 tsp. cinnamon
1¼ c. vegetable oil
3 eggs
2 Tbs. vanilla extract

Directions:
Directions:
Preheat oven to 350.
In large bowl, combine the flour, baking soda, salt, sugar and cinnamon.
Add the oil, eggs, and vanilla - mix well.
Fold in apples by hand.
Divide the batter between two 8x4 - inch greased loaf pans

Bake at 350 for 1 hour or until toothpick inserted in the center comes out clean. The batter is very dense, almost like cookie dough, the loaves don't rise much.

I also add the topping from rhubbarb bread to the top of the Apple Bread.
