4 medium zucchini, sliced 1/2 inch
3/4 c. shredded carrots
1/2 c. chopped onion
6 T. butter or margarine
2 1/4 c. herbed stuffing cubes
1 c. condensed cream of chicken soup
1/2 c. dairy sour cream

Directions:
Directions:
Drain cooked zucchini. In a saucepan, cook carrots and onions in 4 T. butter until tender. Remove from heat ad stir in herbed stuffing cubes, soup and sour cream. Gently stir in zucchini. Turn into a 1 1/2 qt. casserole. Melt remaining butter; add remaining stuffing cubes. Toss gently and top casserole. Bake in a 350 oven 30 to 40 minutes.
