Powdered Sugar
Softened margarine or butter (1 T. per 2.5 c. powdered sugar)
Milk
Extract (vanilla, almond or lemon)

Directions:
Directions:
1. Cut margarine into powdered sugar, mixing as you do for pie crust.
2. Add milk, a little at a time, and stir until smooth and margarine is no longer visible.
3. Add extract (amount to your liking, start with ¼ teaspoon) and milk until icing is spreading consistency.

Personal Notes:
The margarine adds a little flavor but also keeps the icing from getting crackly hard. However, too much margarine will keep the icing from setting up enough to stack the cookies. Even after many years of decorating, it's still a trial and error for me to get just the right consistency. I bake my cookies crisp but the icing softens the cookies to perfection!
