6 large peeled carrots, cut diagonally into one inch slices
Butter sufficient to coat the carrots
Salt
1 or 2 tbs honey or maple syrup

Directions:
Directions:
Boil enough water to cover the carrots. Place the carrots into the boiling water. Cook on medium heat for 6 or 7 minutes until tender but still crisp.

Drain the carrots. In a cast iron skillet, melt a half cube of butter, or more. Place on medium heat and add the carrots. Stir until carrots are covered with butter. Drizzle the honey or syrup over the carrots and stir until incorporated. A little char is good. Season with salt to taste. Other herbs can be added to taste. Serve
