Ingredients:  
Five medium fresh garden tomatoes, sliced into 1/4 inch slices
Leaves of one bunch fresh Italian parsley, chopped
1 medium red onion, chopped
olive oil and red wine vinegar, 2 parts oil, 1 part vinegar, adjusted to taste
1 tsp. salt
2 tbs. sugar
juice of 1/2 lemon

Directions:
Directions:
Combine all the ingredients except tomatoes in a bowl and whisk to emulsify. Put tomatoes into mixture and finish with lemon.. Adjust to taste. Refrigerate for at least two hours. Serve.

This keeps well. Add tomatoes to the mixture to keep it fresh.
