1-2 pounds of fresh green beans (or more depending on the number to be served)
1/2 pound of bacon (or more)
1 can diced tomatoes with juices
1 medium yellow onion, diced'
1 clove garlic per pound of beans, minced
juice of 1/2 lemon
tsp. tomato paste (per pound of beans, optional)
Salt and pepper
Thyme or other spices, to taste

Directions:
Directions:
Bring enough water to boil to cover the beans. Boil until tender but still crisp. Drain the beans and shock them in cold water to stop the cooking. In an iron skillet, fry the bacon until done to taste, Remove and drain. Add to the skillet onion and garlic and cook on medium heat until onion is translucent and garlic releases its flavor. Don't burn the garlic!

Cut bacon into pieces and return to skillet along with the green beans. Heat for a couple of minutes over medium heat. Add the tomatoes, reserving the juices. Add spices and stir. Add tomato juice and tomato paste. Stir. until incorporated. Add lemon juice, salt and pepper.
