Hot water pie crust (makes 1 pie crust)
1 cup sifted flour + 2 T
1/4 tsp salt
1/4 tsp baking powder
1/3 cup soft shortening
3 T boiling water

Directions:
Directions:
Measure shortening in 1/3 cup level with rubber scraper. Set cup containing shortening over hot water to soften. Do not melt. Measure boiling water into medium mixing bowl. Put softened shortening into bowl and beat and beat with wooden spoon until creamy and smooth. Sift flour, measure, now measure salt and baking powder. Add to fat mixture and stir until a round soft ball forms. Chill 5 minutes in freezer. Divide dough. Place on slightly floured board, roll lightly from center toward the edge until its 1/8 inch thick. Fold dough in half and slip plate beneath open dough and fit into pie pan.

Press to exclude all air. Trim around edge. Crimp edges, pierce with fork to permit air to escape to prevent humping. Bake at 425º for 2 minutes. Pierce again if necessary. Bake another 6 minutes or till crust is golden brown. Fill with your favorite filling. Top with meringue or whipped cream or cool whip.
