4 slices bread, toasted
1 tsp cinnamon
4 T soft margarine
2 T brown sugar replacement or to taste

1 envelope unflavored gelatin (1 T)
1/2 Cup lemon-lime diet soda
2 Cups crushed pineapple (canned in its own juice) with juice
1 1/3 Cups ricotta cheese
Artificial sweetener equal to 4 tsp sugar or to taste
1 tsp vanilla
Dash of salt

Place toast, brown sugar replacement, cinnamon in blender and blend into fine crumbs. Pour into a small bowl and add the margarine, mixing well. Press half of this mixture into a 8 inch pie plate. Chill.

Soften gelatin in the cold diet soda. In saucepan heat crushed pineapple until boiling point, add softened gelatin and stir until gelatin is dissolved. Chill in refrigerator until set. In blender combine ricotta cheese, artifical sweetener, vanilla, salt and gelatin mixture and blend until smooth. Pour into crumb lined pie plate, sprinkle top with remaining crumbs and set until firm.
