16-24 lb. turkey

2 gallons cold water

1/2 c. Kosher salt

1/2 c. Sugar

2 T. Dried sage

2 T. Dried celery seed

1 T. dried thyme

10 oz. kikkoman soy sauce

Directions:
Directions:
1. Remove giblets and turkey neck
rinse inside and out.

2. In a large stock pot or 5 gallon container, mix water with remaining brining ingredients, stir well until all salt dissolves.

3. Place turkey in pot, cover with a lid and marinate in the refrigerator for at least 8 hours or overnight.

4. Remove turkey from brine, rinsing well,
Follow your regular cooking instructions.
