2 boneless, skinless chicken breasts
3 cloves garlic, finely chopped
2 tbsp. chicken broth
1 ½ tsp. ground cumin
1 tsp. ground ginger
1 tsp. salt
½ tsp. ground turmeric
½ tsp. paprika
¼ tsp. ground cinnamon
1 tsp. black pepper
fresh lemon
olive oil flavored cooking spray

Directions:

Combine garlic, broth, cumin, ginger, salt, paprika, turmeric, cinnamon, and pepper in a large bowl. Mix thoroughly, forming a paste. Spray several squirts of cooking spray into paste and mix well. Add chicken to mixture, coating completely on both sides. Loosely cover chicken with plastic wrap and let sit in mixture for 15 minutes.

Coat 12-inch skillet lightly with cooking spray. Add chicken, cover and cook over medium heat for 20 minutes. Turn chicken over and squeeze several drops from fresh lemon over the poultry. Cover and cook another 20 minutes. Add a tablespoon of water if chicken becomes too dry.
