1 lb. chicken breast
1 tbsp. olive oil
1 c. yellow onion, diced
1 tsp. oregano
4 c. water
4 c. chicken broth
1 tsp. garlic powder
1 tsp. cumin
½ tbsp. cilantro, chopped
¼ c. chopped green chilies
3 cans great northern beans
½ c. cornstarch
½ c. cold water

Directions:
Directions:
After trimming fat from chicken, bake at 325º for 20-30 minutes or till cooked through. Allow to cool, then hand-pull into small pieces. Set aside. Sauté onions, oregano, and oil in soup pot for 5 minutes. Add water, broth, garlic, cumin, cilantro & green chilies. Bring to a boil. Reduce heat and simmer. Add chicken and beans. Simmer 15 minutes stirring frequently. Blend cornstarch with cold water and add to chili. Continue to simmer until chili thickens, then remove from heat. Garnish with fresh cilantro, sour cream, and shredded cheddar.
