Two fat Mallard ducks, cleaned, picked and singed (Ducks should hang in a cool room for 2 days before cooking)
salt, pepper and garlic salt
2 apples, quartered
2 stalks of celery
1 onion quartered
2 tbs. butter

Directions:
Directions:
Season the ducks with salt, pepper, and garlic salt. Rub with butter. Stiff with onion, celery and apples.

Roast in a 350 degree oven for approximately one hour. Duck juice should run clear, but don't over cook.
Let rest 15 minutes. Serve with duck sauce.

When ducks are fresh and cooked well, they are food for gods. One year, after a particularly good hunt, we served 40 guests one duck each (with several quarts of duck sauce). Spinach casserole and Andy's rice make good side dishes for a crowd.
