˝ c. onion, chopped
2 garlic cloves, minced
2-3 cans of northern beans
1 can petite diced tomatoes * with Italian seasoning
4 c. chicken broth
˝ c. thawed frozen spinach

Debbie’s kicked up version
1 can of northern beans
1 can of black beans
1 can of pinto beans
Replace spinach with can of chopped green chilies
Minus Italian seasoning

Directions:
Directions:
Sauté onions & garlic in a pot for 2 minutes. Add beans and keep cooking another 3 minutes. Add tomatoes and broth ( and green chilies if making that variation ). Bring to a boil. Reduce heat and simmer 20 minutes. Add spinach before serving. Serve with pasta

The original has always been a family favorite. Then we had Debbie’s kicked up version and our soup lives changed forever!!
We enjoy both versions with some cornbread. Naturally I have to make 2 types . . . the mid west cake like delicacy, and Dad’s kind. Hahaha
