1 lb. hot sausage
½ medium onion, chopped
2 large garlic cloves, minced
6 c. fresh spinach/ 1 c. frozen spinach
4 c. chicken broth
½ a can of cannellini beans, drained and rinsed
1 tsp. oregano
1 tsp. dried basil
1 tbsp. dried parsley
1 c. water
1 c. uncooked penne pasta
2 tbsp. melted butter
2 tbsp. flour

Directions:
Brown sausage in large pot. Add onion and cook till soft. About 3-4 minutes. Add garlic and cook additional 1 minute. Add spinach and cook until wilted- approximately 3-4 minutes. Drain any excess grease. Add chicken broth and simmer 20- 30 minutes. Add beans, oregano, basil, parsley and water. Bring to a low boil. Add penne pasta and cook another 15 minutes or till pasta is tender. Reduce heat to low. Combine melted butter and flour to form a roux. Add slowly to soup and stir until soup slightly thickens. Enjoy.
