⅓ c. flour
⅔ c. sugar
¼t. salt
2 c. milk
3 egg yolks, beaten
2 T. oleo
½ t. vanilla
1 c. coconut

Directions:
Directions:
Mix together dry ingredients: flour, sugar and salt. Set aside. In a medium saucepan gradually beat eggs into the milk and heat to scalding (DO NOT BOIL). Gradually stir in dry mixture into the scalded milk. Cook and continue stirring until mixture thickens. Remove from heat and stir in butter or oleo, vanilla and coconut. Pour in a baked pie shell. Chill for 1 - 2 hours. If you are putting a meringue toping on pie, do this first and then chill.

3 egg whites
6 T. sugar

Directions:

Beat egg whites until they form stiff peaks; gradually add 6 tablespoons sugar. Spread over filling and put under broiler 3 to 5 minutes. (You can use whipped cream).
