1 lb tilapia fillets
3 tbsp butter
1 medium onion, diced
2 garlic cloves
1 12 oz jar roasted red pepper
¾ cup heavy cream
½ cup grated Parmesan cheese
salt and pepper

Directions:
Directions:
Melt 2 tbsp of butter in a large non-stick skillet and fry the fish for 3-4 minutes on each side
Dice half of the roasted peppers and purree the other half, set both aside.
Season fish with salt and pepper, remove from skillet and set aside. Add the remaining 1 tbsp of butter to the same pan and saute the onion for 5 minutes.
Add garlic, diced and pureed roasted red peppers to the sauted onions. Cook for 5 minutes.
Stir in the heavy cream and Parmesan cheese. Turn off heat and adjust seasonings.
Return fish to pan and cover with sauce.
Serve over rice.
