1lb Shrimp
2 Sweet Potatoes
2 Zucchini quartered
1 tbsp butter
1 tbsp chopped capers
1 tbsp chopped garlic
2 minced anchovies
½ Lemon juiced
Salt & Pepper

Directions:
Directions:
Cube and boil sweet potatoes until tender.
Sautee' butter, garlic, capers, and anchovies
Add shrimp, zucchini, and cooked sweet potato
Sautee' until shrimp are pink and zucchini is tender with a bite.
Finish with lemon juice and salt & pepper to taste.
Serve over rice or eat as is.
