Ingredients:  
7 medium potatoes, about 5 cups, finally diced
2 hard boiled eggs, peeled and finally chopped
1/2 cup sweet salad cubes ( found in the pickle aisle)
1/2 of a medium onion, finely chopped, or more or less to taste
1/2 to 3/4 cup mayonnaise
1 teaspoon yellow mustard
1/4 teaspoon pepper, or to taste
1/2 teaspoon salt, or to taste

Directions:
In a large pot of boiling, salted water, cook potatoes until tender, about five minutes. Drain well and return to pot. Add in boiled eggs, sweet salad cubes, onion, 1/2 cup mayo, mustard, salt and pepper. Stir well. If it’s not creamy enough add in a little mayo at the time until it is the consistency you want. Taste and make sure you have enough salt and pepper. Served chilled

If you want a more chunky potato salad after draining the potatoes put in fridge until cold. Then add all other ingredients and stir well.
