1 28-ounce bag of baby red potatoes
2 TBSP canola oil
1/2 tsp kosher salt
1/2 tsp pepper
2 TBSP chives, finely chopped
2/3 cup sour cream ranch style dip
1 cup shredded cheddar cheese
1/2 cup french fried onions

Directions:
Directions:
1. Preheat oven to 325º

2. Toss potatoes with oil, salt and pepper. Place in 2-quart baking dish.

3. Bake 35-40 minutes, or until potatoes are fork-tender. Remove from oven.

4. Mash potatoes coarsely with potato masher.

5. Chop chives. Spread dip over potatoes. Top with cheese, fried onions and chives,

6. Bake 8-10 more minutes, until cheese melts.
