3 Tbsp. butter
3 Tbsp. unsweetened cocoa
3/4 c. semisweet chocolate chips
3/4 tsp. vanilla extract
3 egg yolks
3 egg whites
3 Tbsp. sugar
1/4 tsp. salt
1/4 tsp. cream of tartar

Heat oven to 375º. Use cooking spray to grease 4 - 6oz. ramekins. Coat each of the ramekins with the cocoa, tapping out the excess into the next ramekin.

Create a double boiler, using a large metal bowl over a pan of simmering water. Melt the chocolate and butter. Stir occasionally until smooth. Remove the bowl from heat and add the vanilla.

Temper the yolks by first adding a small amount (2 Tbsp.) of chocolate mixture into the yolks by stirring vigorously. Then whisk the yolks into the remaining chocolate mixture. Set aside.

In a clean stand mixer bowl, beat the egg whites. Add the sugar one tablespoon at a time. Add salt, and cream of tartar until still, but not dry, peaks form.

Gently fold the egg-white mixture into the chocolate. Spoon into the prepared ramekins.

Place ramekins onto a cookie sheet. Bake until puffed and set for 20 minutes. Sprinkle with powdered sugar.
