3 Tbs. yeast
1 Tbs .sugar
1 c. warm water
10 c. flour
½ c. sugar
1 Tbs. salt
½ c. vegetable oil
3 c. warm water

Mixing and Kneading
1. In a small bowl, mix yeast with 1 Tbs. sugar, then add one cup warm water. Stir until dissolved. Let rise until doubled (about 10 minutes).

2. In a large mixing bowl, add 9 1/2 - 10 cups flour, 1/2 c. sugar, and salt

3. In the center of the flour, pour the yeast mixture and add oil and 3 cups warm water. Mix together with a long-handled wooden spoon. It will look pretty shaggy. Use your hands to get the dough off the sides of the bowl. Let the dough rest for 15 minutes.

4. Knead dough until the texture is consistent and smooth throughout.

5. Let the dough rise in a warm area with light cotton cloth over the bowl. When it has doubled in size (approx. 1 hour), punch the dough down. At this time, you can either let it rise again for a second hour or make into loves/rolls. A second rising makes for lighter loaves.

Baking -
Punch dough down. Cut into 4 equal sections. Shape each dough section into a loaf. Place in four greased 9x5 inch loaf pans. Butter the tops, cover with a cloth, and let rise for 45 minutes or until doubled in size and about an inch above the top of the tin.

Bake at 375º for 25 minutes or until golden brown.
