6 bone in, skin on, chicken thighs
1 tbsp. Italian seasoning
salt and pepper to taste
3 tbsp. butter - divided
3 c. Baby spinach - roughly chopped
16 oz. baby Dutch potatoes - halved
2 tbsp. fresh parsley - chopped

Parmesan Cream Sauce:
1/4 c. butter
4 cloves garlic - minced
2 tbsp. flour
1 c. chicken stock
1 tsp dried thyme
1/2 tsp dried basil
1/2 c. half n half
1/2 c. freshly grated parmesan
Salt and pepper to taste

Directions:
Preheat oven to 400º. Lightly oil a 9x13" pan. Season chicken with salt, pepper, and itaalian seasoning. Melt 2 tbsp butter in skillet, you want this hot but not smoking. Sear chicken, skin side down, for about 2 to 3 minutes per side. Remove from pan and set aside.

In the same skillet melt bsp butter, add chopped spinach and cook until wilted. Set aside.

Sauce:
Melt butter with flour and cook for one to two minutes. Add garlic and cook until fragrent. Gradually add stock and cheese until thick. If it is too thick add a bit more stock. Place the chicken in the prepared pan (skin side up). Top this with potatoes and spinach. Pour the sauce over this, bake for 25 to 30 minutes or the chicken registers 160º on a thermometer.
